Coconut Peanut Butter

Are you a nut butter lover like me? I love them all: peanut butter, almond butter, cashew butter, hazelnut butter…

For years, I have been preparing my one ingredient nut butters either at home or at Whole Foods, which lets you grind the nuts on the spot and make fresh peanut or almond butter. The store-bought route is a bit expensive, but some days you can’t help to take the easier route!

Recently, however, I have decided to expand my recipes and create new mixtures at home. My coconut peanut butter became an instant success, and is super popular with my family and close friends. So today, I’m sharing it with you as well! 

How to make coconut peanut butter at home 

While it may sound difficult, making coconut peanut butter at home couldn’t be easier! All you need are a few simple ingredients (no more than 5) and a FOOD PROCESSOR or a BLENDER .

Note: For any nut butter recipe, it is recommendable to use a nut friendly FOOD PROCESSOR or a POWERFUL BLENDER . I have used a CHEAP FOOD PROCESSOR once, and although it requires a bit more patience and the texture might not be quite as smooth, it still tastes really good!

This recipe takes about 10 to 15 minutes to complete, and by the end you’ll be loving it so much that you’ll want to make it again. 

I love to eat this coconut peanut butter pre-work on toast with some sliced apples on top, or as a topping for an acai bowl in the summer.

Ingredients you’ll need for this coconut peanut butter recipe:

There are a few variations to the coconut peanut butter recipe, but I found that with the following ingredients I get the best texture and the yummiest taste:

  • Peanuts: 2 cups roasted, unsalted peanut

  • Shredded coconut: 1 cup

  • Coconut Oil: 2 TBSP

  • Agave or Maple Syrup: 2 TSP pure

  • Sea Salt: ½ TSP

Follow this guide to have the best result and the most delicious nut butter!

  • Roast your peanuts

Unless you bought already roasted nuts, gather your peanuts and preheat the oven to 350 F. Put your shelled or unshelled peanuts in a shallow baking sheet and bake for 8-10 minutes. For shelled peanuts, I’ll normally leave then one or two extra minutes.

 I try to buy most of my nuts raw, including the peanuts. I then proceed to roast them at home myself, especially for use in recipes like this. Roasted peanuts will make the blending process easier, since it helps release the oils in the nuts and adds a delicious roasted flavor. 

 However, always make sure to roast your nuts for 10 minutes or less, as it will help keep most of the nutrients. If you roast almonds, peanuts or any nut for too long, you can lose out on some of the nutritional value!

Can you make coconut peanut butter with raw peanuts?

You definitely can. Many people prefer to play safe and not even take the risk of roasting the peanuts. Some also might not like the roasted flavor. If that’s your case, make sure to have a powerful food processor or blender and to add a bit more coconut oil (or another nut) into the recipe if needed. 

Note: With cheaper food processors, you might need to spend more time adding oil or simply blending, but you can still prepare this recipe!

  • Let the peanuts cool down

Once the peanuts are out of the oven, let them cool down to room temperature. 10 minutes should be enough. 

  • Blend all the ingredients

Next, add the peanuts into the blender or the food processor. Blend the peanuts at high speed, and keep blending until the oil in the nuts starts to be released.

If at any point during the processing or blending you feel like no progress is being made or notice the peanuts sticking to the sides, you might need to turn the processor off and scrape the sides to bring the contents back to where the blades can reach it.

Then, turn the blender or processor back on and start adding the coconut oil. Keep processing and you’ll notice how the oil from the peanuts and the coconut oil start mixing together as the paste begins to form. 

Continue blending and add the rest of the ingredients: the shredded coconut, salt, and maple syrup/agave. Keep processing until you get a paste that is creamy and smooth.

Note that depending on your blender, this process can last 10-15 minutes or even a bit more, you just have to be patient!

  • Meal Prep it

Now that you have the most delicious and creamy coconut peanut butter, all you need to do is store it in some glass containers or airtight mason jars and keep it refrigerated.

Note: Choosing to store the coconut peanut butter refrigerated or not comes to personal preference. I always keep my nut butter refrigerated, as room temperature in my NYC apartment can vary a lot throughout the day and depending on the season.

Some people prefer to store it at room temperature, as the coconut peanut butter or any other nut butter can become harder in the fridge and lose some of its creamy texture.  

How long does coconut peanut butter last?

Regular one ingredient butters like almond butter or peanut butter can be stored in tightly sealed glass containers in cool, dry places for a couple of months. But, honestly I haven’t stored my coconut peanut butter for more than a month at a time. It’s just too yummy and I end up eating it all!

You should definitely try making this coconut peanut butter at home, because I haven’t found anything store-bought with this specific delicious flavor. By making it at home, you’ll not only be able to control where the ingredients come from, but you’ll ensure that the end result will be full of the maximum vitamins and nutrients from the nuts. You can almost always get healthier, cheaper, and better options by preparing your own homemade yummy recipes. 

Making your own one ingredient butter at home (almond, peanut, cashew, etc) might not seem worth it money wise, or it might be too much work, especially if you live a very hectic and busy life. But if you ask me, a distinctive and delicious recipe like this would definitely be worth spending some extra time on, especially if you love nut butter and are an avid healthy eater!

What can you eat coconut peanut butter with?

I love to eat this coconut peanut butter straight out of the bowl as a pre-workout meal, or anytime for an energy filled snack.  I also love it on whole grain toast with fruit on top as well! 

Try adding it as a topping in your morning or afternoon bowls (porridge, acai, fruit, smoothie, yogurt parfaits, etc). 

Or prepare some delicious overnight oats and no-bake energy balls with it. 

Is Coconut Peanut Butter like Peanut Butter: what are their health benefits?

This coconut peanut butter is very similar in nutritional value to regular peanut butter. As long as you make a nut butter with whole foods and healthy ingredients, your body will definitely get great benefits!
